Well, technically it’s throw-back-Sunday, but whatever. I had the fixins for baked coconut shrimp for February’s snack challenge, but I didn’t get a chance to make it until now, so a little throw back to last month!
This was easy and tasty. The only thing I would do differently is make a dipping sauce to go with it!!

One of us doesn’t eat meat, the other has given up potatoes. This is going to make the March challenge of Irish meals really interesting!!
A favorite appetizer at cocktail parties is Sweet and Sour Meatballs, but being vegetarian I do not partake of those tasty morsels. But now I have my own version!! My version came out a bit larger than appetizer size and didn’t get completely glazed, but the taste was wonderful!!

These healthy blueberry muffins are 100 calories in the full muffin size, but I made them in a mini muffin pan!! Means I can eat more of them right??

With a nod to Mardi Gras this month, both CarbLover and I made spinach balls. (CarbLover forgets how to blog post so you may or may not see her version!) These were a pretty tasty and filling snack. Next time I may add some garlic or other herbs.
You can’t have a snack themed challenge without the ultimate snack….Guacamole!!!
This is one of the few things I can make without a recipe!! Avocado smashed with a fork, diced onion, diced tomato, minced garlic, squeeze of lime…..eat!!
Simple, tasty, healthy – no recipe needed!
Toast bread, drizzle/spray with olive oil, arrange sliced avocado, sprinkle with a pinch of salt……Enjoy!
In honor of Super Bowl 50 (though neither of our teams made it this year) this month’s challenge will be healthy snacks/appetizers! Working late, after work commitments and social engagements often lead to not having time to prep for and fix healthy dinners. Rather than turning to processed food, unhealthy take out, etc. why not create a dinner of “small plates” – healthy snacks, appetizers and smaller portions!

But THIS curry dish will score points at the dinner table! I wasn’t sure if I would like curry, but reading the recipe I enjoy all the ingredients so I thought I’d give it a try!! So glad I did!! The flavors were so tasty!! I substituted brown rice for the basmati as that is what I had on hand!
