ok soo no fancy bowl presentation this time… we cowed it down pretty quickly. This weekend brought much snow to our area, so what better way to warm up after shoveling snow all afternoon. .. Potato Broccoli Soup.
2lb diced red potato
1 broccoli stalk
2 cups diced carrots
4 cups chicken stock
brought to a boil in a medium saucepan for 20 minutes. Blend well with emulsion blender. Add 1 cup shredded cheddar. Stir until melted. Serve with your favorite crackers!!
Challenge 1 for 2015 is complete! woo-hoo. Still have a few soups I want to make so stay tuned, I will post about them when I make.
I don’t go to Panera often, but when I do I indulge in one of their tasty, but not so healthy, soups!
This recipe is a copycat of their Autumn Squash Soup and O-M-G! It is Soooo good!! The only thing missing was a piece of crusty bread, which I may just have to pick up tomorrow to enjoy with the leftovers!!!!
I visited my sister over the weekend and she served a delicious soup one afternoon. Yes yes, I was going to use her soup for my challenge….but SkinnyM would probably say that’s not fulfilling MY challenge, but this soup was too good not to mention
We had potato, broccoli and bacon in the soup. The ‘broth’ was comprised of pureed potato and broccoli with chicken stock. Was thick and hearty…. and delicious!!!! Thanks Christy! !!

After traveling all weekend, I have much to do before going back to work tomorrow. Haven’t had time to grocery shop so soup this week has several criteria to meet… quick, easy, found in my pantry and make enough for work lunches. I am not a huge ground turkey fan.. I found it to be dry, tasteless and chewy. However when cooked in broth or sauce it’s not to bad…if I do say so myself.
1lb ground turkey
1 cup chopped onions
1 can hot chili beans
1 can medium chili beans
1 can RoTel tomatoes
1 1/2 T chili powder
1t garlic powder
Turkey browned in bottom of sauce pan. Once cooked add rest of ingredients and a cup of water, let simmer on low heat for 2 hours. (OK so not ‘quick’ meal but prep time is 5 minutes!)
Being busy means I need simple and quick recipes and this is one that is simple, quick AND tasty (though my #carblovernotapealover friend probably will not agree). I like this soup not only for the easy prep, but a simple broth soup always makes my sniffles go away and hopefully my extra love handles too!!
