April was a tough month for both Carblover and I. Just like the MLB, Life also got in the game with throwing us both some curve balls, stealing some bases and striking us out. BUT, we took a girls trip to Nashville, regrouped and came back ready to saddle up the horses and get back not just on the wagon, but driving it!!
So for May we are going to keep it simple and healthy for our challenge – SALADS!

Salad in a jar, salad on a bar, caesar salad, cobb salad, salad with dressing or without, fruit, potato – there are endless pastabilities!!
I have been trying to become a fan of the overnight oatmeals. Prepared the night before they become a super quick and easy breakfast. Problem is that I don’t like cold oatmeal. So, I stick to recipes that allow me to heat the oatmeal in the morning! This one was a chai oatmeal with toasted pecans and coconut on top!
The only thing I would do different is add some more almond milk when I heat it, I prefer my oatmeal to be a little runny. Otherwise, this was a win for breakfast!!!
After a weekend of beers and bar food in Nashville, it is time to get serious about healthy eating! Re-committed to logging my food and creating meal plans to get back in control.
Tonight’s dinner was an easy roasted broccoli and garlic (just love me some roasted garlic!!!). Once out of the oven it’s tossed with lemon juice, toasted pecans and parm cheese. Bummer that I burnt the first batch of pecans!!
I was excited when CarbLover said her challenge this month would be nuts because I’ve been eyeing up a cashew cream for months! Now I have a reason to actually challenge myself to try it!!
This recipe for taco salad is actually a two-fer for this month’s nut challenge! It calls for a walnut taco meat and the cashew cream!
My final product isn’t has pretty has the original recipe from Oh She Glows, but it was really good!!! The recipe makes ALOT of cashew cream so I’ll be trolling Pinterest to find some other recipes to use it up!
I hadn’t had time to give this month’s challenge serious thought, when this little “peanut” popped up in front of me! Super simple, but exactly what I needed for a busy week and uber healthy! Baked sweet potato with peanut butter, peanuts and cinnamon!
Quick post…. it’s been a crazy couple weeks… some might call it NUTS.. so in honor of my crazy weeks… April’s challenge is Nuts. Pea, Wal, Hazel, and Pine…. pecans, almonds or Cashew. If its a nut.. it’ll fit right in. See you soon with a nutty dish!
