Valentines Dinner came a night late at our house. With temps hovering around… MINUS 6, this girl wasn’t leaving the house. Simple steak served with red potatoes and a mushroom/onion in red reduction topping.
Mushroom/Onion Red Wine Reduction :
1/2 sliced onion
1 8oz package of mushrooms sliced
2 T butter
1 c Red wine (I used shiraz, as that is what I was drinking)
In a small saucepan, sauté the onions and mushrooms in butter until cooked down, add wine and allow to cook down to half. Divide evenly over cooked steaks. (Steaks seared on grill pan, seasoned with just salt and pepper and a little EVOO)
Red Potato dish
3 lbs small red potatoes thinly sliced
1 c heavy cream
1 c shredded cheddar cheese
In a medium casserole dish, layer the red potatoes and cover with the heavy cream. Bake covered, in 350 oven for 45 minutes, Remove the lid and sprinkle cheese. Return to oven and bake for 15 more minutes.
