Pumpkin Goat cheese Fettucini

ok soo I forgot to take a picture before jumping in and tasting..it just smelled soo good! Fettucini Alfredo is a fabulous dish but a little high in fat so I made a healthier version. Don’t knock it til you try it. I’m not a huge pumpkin fan myself but once creamed with goat cheese and cream… delish.

1 cup pure pumpkin puree

1 4oz brick of goat cheese ( I used honey infused just to add a little more flavor)

1/2 c cream ( I had heavy cream on hand so I used… could use just some milk)

1T pumpkin pie spice *what??? Yes pumpkin pie spice!

2t butter

1t fresh minced sage

Cream all together in a medium saucepan until hot and silky smooth… toss into a pound of cooked fettucini. ENJOY!!!
