For my first “F” food I chose Feta. The famous Greek cheese is made by goat and sheep milk and by Greek law it must be cured in brine for at least 3 months. True “feta” can only be produced in certain areas, of the EU; anything produced outside of these areas cannot be called “feta”.
I prepared a spinach, mushroom and feta crustless quiche that I shared for a breakfast office meeting and it was consumed and approved by my colleagues!
FETA FUN FACT: The average Greek citizen consumes 26.5 lbs of Feta every year.
