Week 4 Broccoli carrot potato soup


ok soo no fancy bowl presentation this time… we cowed it down pretty quickly. This weekend brought much snow to our area, so what better way to warm up after shoveling snow all afternoon. .. Potato Broccoli Soup.

2lb diced red potato

1 broccoli stalk

2 cups diced carrots

4 cups chicken stock

brought to a boil in a medium saucepan for 20 minutes. Blend well with emulsion blender. Add 1 cup shredded cheddar. Stir until melted. Serve with your favorite crackers!!

Challenge 1 for 2015 is complete! woo-hoo. Still have a few soups I want to make so stay tuned,  I will post about them when I make.
