Challenge #1 week 3 SOUP….TURKEY CHILI


After traveling all weekend, I have much to do before going back to work tomorrow. Haven’t had time to grocery shop so soup this week has several criteria to meet… quick, easy, found in my pantry and make enough for work lunches.  I am not a huge ground turkey fan.. I found it to be dry, tasteless and chewy. However when cooked in broth or sauce it’s not to bad…if I do say so myself.


1lb ground turkey

1 cup chopped onions

1 can hot chili beans

1 can medium chili beans

1 can RoTel tomatoes

1 1/2 T chili powder

1T cumin

1t garlic powder

Turkey browned in bottom of sauce pan. Once cooked add rest of ingredients and a cup of water, let simmer on low heat for 2 hours. (OK so not ‘quick’ meal but prep time is 5 minutes!)
