SkinnyM laid the challenge of soup this month. When I order soup out, it’s typically cream or potato based. Who doesn’t love a good broccoli chedear or loaded potato soup….in a bread bowl no less? Well, that could explain why I can’t lose this 20lbs. So in addition to just making soups this month, I’m challenging myself to make them healthy and leave out the potato, cream and yes..the bread bowl. This morning I pulled out the crock pot and tossed in everything for dinner. It was pretty darn tasty. The only thing I would probably change would be to add a diced jalapeño for a little more heat but in the end..it was quite tasty. Here’s the recipe…

Chicken Enchilada Souplease

2 chicken breaststock

1 can of low sodium seasoned black beans

1 can of corn

1 diced onion

1 can of diced tomatoes

1 Tbs Cumin

1 box of Vegetable stock

Combine all ingredients in crock pot. Cook on low for 6-8 hours. Remove chicken breasts and shred… return to the crockpot. Serve with a little shredded cheese, dollop of sour cream and a little avocado. I also served with a little tortilla chips. Super easy to throw together and let cook while you  work.
