Week 1, Soup 1

My first “soup” (chili counts!) of January is one I’ve made before and love!  Slow Cooker Quinoa Chili.  I’ve topped it with some mild cheddar cheese and a dollop of Greek yogurt!  Course I made enough to last me the entire month!  But I’m eyeing up a couple other recipes for this month’s Challenge!
